Production Notes: The Sauvignon Blanc grape harvest is carried out in mid-September. The extraction of the must is done using pneumatic presses, thus limiting the pressure at which the flower must is obtained. Once the impurities of the must are eliminated, fermentation is initiated with selected yeasts at a controlled temperature, not exceeding 17°C. Bottled in early March 2021
